Richard’s ‘Steak & Avocado Salad’ | DLicious spring summer menu 2018

Last October, we launched a competition and asked our members to send in their favourite recipes ahead of the launch of our spring summer 2018 DLicious menu. Out of the thousands of entries we selected our five favourites and and asked our members to vote on which they wanted to see added to the menu.

We can now announce your two choices and their winning recipes, which will appear in our brand-new menu.

One of the two winners was Richard Davies from our Swansea club. Here is Richard’s ‘Steak & Avocado Salad’ cooked for us by Theo Michaels.

 

Richard’s Inspiration

Richard, a lawyer and keen rugby player from Swansea, submitted his delicious protein-packed steak salad.

Here is what he had to say about the inspiration for his dish:

“As a lawyer, I’m always on the go, so I don’t actually cook all that much. If you do find me in the kitchen, I’m probably making a curry or something Mexican – something spicy, for sure. That makes my steak and avocado salad a bit of a departure, really.

I’ve made it for about four years now – it helps my rugby training because it’s high in protein and healthy fats. Also, I have to make it myself since I’ve never found it anywhere else!

Being a winner is a little surprising, I will admit, and I’m delighted, I really am. Try it for yourself – get stuck in!”

 

The Steak and Avocado Salad

 Richard’s salad is full of protein and good fats but low in carbohydrates. This makes it the perfect pre or post workout meal, as it provides the energy and protein needed to help build & repair muscle.

What’s even better? It tastes fantastic! Beautifully cooked sirloin steak, salty feta, creamy avocado, fresh cucumber, peppery red onion and sticky & sweet balsamic glaze all come together for a taste explosion… No wonder our members voted to get this dish on the spring summer menu!

Ingredients:

  • Sirloin steak
  • Crumbled feta
  • Sliced avocado
  • Mixed leaves
  • Sliced cucumber
  • Cherry tomatoes
  • Red onion slices
  • Balsamic glaze
