Last October, we asked our members to send in their favourite recipes ahead of the launch of our spring summer 2018 DLicious menu. We then selected our top five recipes and put this shortlist to a member vote to find out your favourites.
We can now announce your two choices and their winning recipes, which will appear in our brand-new menu.
One of the two winners was Charlotte Nicols from our Glasgow Renfrew Club. Here is Charlotte’s ‘Brunch of Champions’ cooked for us by Theo Michaels.
Charlotte, a trainee doctor, is a member of our Glasgow Renfrew Club. She submitted a glorious brunch dish inspired by her travels in Australia.
Here is what she had to say about the inspiration for her dish:
“I’ve always loved cooking, and I’ll often try out new recipes at home. When I was on holiday in Melbourne, I just loved their café culture – especially those fantastic Aussie brunches! I suppose they’re what inspired me to try and come up with a brunch recipe of my own, and here it is. I’m just so thrilled to have won and I hope other people enjoy it as much as I do.”
The ‘Brunch of Champions’
It is easy to see why so many members voted for Charlotte’s dish – it tastes absolutely fantastic, offering a wide range of different, delicious flavours and textures in the creamy avocado, smoky chorizo, salty feta, sweet cherry tomatoes and oozing poached eggs. Not only does it taste great, but it provides the ideal balance of protein, good fats and complex carbs – a combination guaranteed to keep you full for longer.
